Tamago-Yaki is a popular Japanese dish that translates to grilled or fried egg. It is a staple breakfast item in Japan and can be found in many eateries and homes. The Tamago-Yaki, or rolled omelet, is made by rolling thin layers of egg into a rectangular shape until it forms a firm and spongy roll. This dish is simple to make, yet it requires some skill to perfect the art of layering. It can be served hot or cold, and is often enjoyed with rice, or as a side dish for other traditional Japanese breakfast foods like miso soup or pickles.

Instructions

.Crack the eggs into a bowl and whisk them well.
.Add sugar, dashi stock (optional), and soy sauce to the bowl.
.Mix well.
.Heat the rectangular tamago pan (or a regular non-stick pan) on medium heat.
.Add vegetable oil to the pan and tilt it to coat the bottom evenly.
.Pour 1/4 of the egg mixture into the pan, tilting it to cover the bottom.
.As the egg starts to set, roll it towards you with a spatula.
.Once the first layer of roll is formed, move it to the far edge of the pan.
.Add 1/4 of the egg mixture to the pan, making sure it flows underneath the first layer of roll.
.When the second layer starts to set, roll it towards you with the first layer of roll.
.Repeat the process until all the egg mixture is used.
