1 lb ground beef
1 onion , chopped
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chili powder
1 can tomato sauce
6 corn tortillas ( your own or purchased )
butter or margarine
1 can tomato sauce
1/2 cup water
1 1/2 cups about 6 oz . sharp cheddar cheese , shredded
Authentic Ground Beef Enchilada Pie is a classic Mexican dish that combines layers of seasoned ground beef, tangy tomato sauce, and melted cheese between layers of soft corn tortillas. Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large skillet over medium heat, cook the ground beef until browned, stirring frequently.
3.Add the chopped onion, salt, pepper, and chili powder to the skillet and stir to combine.
4.Add the can of tomato sauce and stir to combine. Remove the skillet from the heat and set aside.
5.In a separate small saucepan, mix together the can of tomato sauce and 1/2 cup of water. Heat the mixture over medium heat until simmering.
6.Spread a thin layer of butter or margarine on the bottom of a 9-inch (23 cm) pie dish.
7.Lay two tortillas flat on the bottom of the dish, overlapping them slightly to cover the entire bottom.
8.Spread half of the ground beef mixture over the tortillas.
9.Sprinkle half of the shredded cheese over the beef.
10.Repeat with another layer of two tortillas, the remaining beef mixture, and the remaining cheese.
11.Cover the enchilada pie with the remaining two tortillas.
12.Pour the tomato sauce mixture over the top of the tortillas.
13.Bake the enchilada pie in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
