Ingredients

1 package corn tortilla , authenic ones in the fridge section . i use on 3/4 of this package ( the small 8 inch ones )
1 1/2 cups oil ( for frying )
1 1/2 cups hot sauce ( see my other recipe Chile de Arbol Hot Sauce )
1 1/2 - 2 cups water ( add more if needed )
1/2 large white onion ( slice in circle )
1 package of oacoxa cheese
2 -3 teaspoons salt
Chilaquillas are a traditional Mexican breakfast or brunch dish made with leftover tortillas. In this authentic recipe, crispy bits of corn tortilla are mixed in a spicy hot sauce and topped with melted Oaxaca cheese and sliced onions. Chilaquillas are customizable and can be served with various toppings such as fresh cilantro, avocado, jalapenos, or fried eggs. Instructions

1.Heat the oil in a large skillet over medium heat. Cut the tortillas into small pieces and fry them in batches until crispy and golden brown.
2.In a separate pot, heat up the hot sauce and water. Add salt to taste.
3.Once the tortillas are fried, add the hot sauce mixture to the skillet and continue to cook for a few more minutes, stirring frequently.
4.Add the sliced onion to the skillet and stir everything together.
5.Once the onion has softened, crumble the Oaxaca cheese over the top of the skillet and continue to cook until the cheese has melted.
6.Serve hot and enjoy!
