2 cups warm water ( about 105 degrees )
1 teaspoon salt
1 teaspoon sugar
2 1/4 teaspoons instant yeast ( like SAF brand )
4 -6 cups unbleached white flour
1 egg white , whisked

Instructions

1.In a mixing bowl, combine warm water, salt, sugar, and instant yeast.
2.Gradually add flour until the mixture forms a soft dough, then knead for 10 minutes.
3.Place the dough in an oiled bowl, cover it, and let it rise for an hour in a warm place.
4.Punch down the risen dough, knead briefly, then divide it into 8-12 portions.
5.Shape each portion into an oval or torpedo shape, score them, then let them rise for 30 minutes.
6.Brush each roll with whisked egg white and bake for 20-25 minutes at 450F, until golden brown.
