Biscotti are a timeless Italian dessert that have been enjoyed for hundreds of years. The word 'biscotti' comes from the Latin word 'biscoctus', which means 'twice cooked'. This refers to the baking process, as biscotti are baked twice to give them their signature hard, crunchy texture. Authentic biscotti are sweetened with sugar and flavored with anise seed, which gives them a distinct licorice flavor. They are often served with coffee or tea for a sweet mid-morning or afternoon snack. This recipe also includes chopped almonds, which add a nice crunch and a nutty flavor to the biscotti.

Instructions

.Preheat your oven to 375°F (190°C).
.In a large bowl, combine the eggs, olive oil, sugar, and anise seed.
.In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture while stirring.
.Stir in the chopped almonds.
.Divide the dough in half. Using your hands, form each half into a log shape about 2 inches (5 cm) wide and 1 inch (2.5 cm) tall. Place both logs onto a baking sheet.
.Bake for 25-30 minutes, or until slightly golden. Remove from the oven and let cool for 5 minutes.
.Using a sharp serrated knife, cut each log into slices about 1/2 inch (1.3 cm) wide.
.Lay the slices flat on the baking sheet and bake for another 10-12 minutes, until golden brown and crispy.
