Ingredients

1 roasting chickens
3 white dinner rolls or 5 slices white bread
1/4 cup milk
1/2 cup butter or 1/2 cup margarine , room temperature
1 egg
2 egg yolks
1 tablespoon dried parsley
1 teaspoon dried thyme leaves
1 pinch nutmeg
salt and pepper
2 tablespoons butter or 2 tablespoons margarine
1 cup chicken broth

Instructions

1.Remove giblets and neck from chicken.
2.Soak bread in milk for 5 minutes and squeeze out excess liquid.
3.In a small bowl, cream butter, egg yolk, parsley, thyme, nutmeg, salt and pepper until light and fluffy.
4.Mix in bread crumbs.
5.Stuff chicken with butter mixture and truss the chicken.
6.Preheat oven to 350°F.
7.Place chicken in a roasting pan.
8.Dab with melted butter/margarine.
9.Roast chicken for about 60-75 minutes, or until juices run clear when pierced with a fork.
10.Baste chicken with chicken broth every 20 minutes.
11.Remove from oven, let rest for 5-10 minutes, and serve.
