1 1/2 cups jarred alfredo sauce
2 tablespoons fresh parsley , minced

Instructions

1.In a large bowl, mix together Simply Potatoes Shredded Hash Browns, Simply Potatoes Traditional Mashed Potatoes, melted butter, instant onion flakes, salt, white pepper, eggs, and evaporated milk until well combined.
2.Heat a good amount of olive oil in a large non-stick skillet over medium-high heat. Add 1/2-cup portions of the potato mixture in the skillet and spread into thin circles.
3.Cook until golden brown, then flip and cook the other side until crispy and golden brown. Transfer onto a paper towel-lined plate to cool.
4.In a separate skillet, add a small amount of olive oil and sauté the green onions and spinach until heated through.
5.Divide the spinach mixture evenly between each potato pancake and top with cooked shrimp.
