1 lb onion , halved and sliced
4 tablespoons olive oil
4 pinches salt , divided
1 pinch fresh ground pepper
2 tablespoons fresh parsley , minced

Instructions

1.In a large mixing bowl, mix together the flour, eggs, milk, and 2 pinches of salt until well combined.
2.In a large pot, bring salted water to a boil and place the spaetzle maker over the pot.
3.Press the dough through the maker into the boiling water until all the dough is used.
4.Let the spaetzle cook for 2-3 minutes or until they float to the surface.
5.Drain the spaetzle and set aside.
6.Preheat your oven to 375°F.
7.In a large skillet over medium-high heat with 4 tablespoons of olive oil, sauté the onions until golden brown.
8.Add 2 pinches of salt and ground black pepper to the onions.
9.In a large mixing bowl, mix together the cooked spaetzle, gruyere cheese, edam cheese, and sautéed onions.
10.Transfer the mixture to an oven-proof dish and bake for 25 minutes.
11.Garnish with fresh parsley and serve.
