Australian Damper is a traditional bread recipe from Australia that dates back to the early colonial period. It was originally made by stockmen who were out in the bush for weeks at a time and needed a simple and hearty bread to sustain them. The dough was often cooked in a campfire, wrapped in a wet cloth and buried in the ashes to cook for several hours. Today, Australian Damper is still a popular recipe and is enjoyed by many as a nostalgic food that represents the early pioneers of Australia.

Instructions

.Preheat oven to 180°C (350°F). Grease a baking tray and set aside.
.In a large mixing bowl, combine the self-rising flour and salt.
.Add in the softened butter, and using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.
.Make a well in the centre of the mixture and pour in the milk and water. Mix well with a wooden spoon or your hands until a dough forms.
.Turn out the dough onto a floured surface and knead lightly for a few minutes until smooth.
.Shape the dough into a round loaf and place on the prepared baking tray. Use a sharp knife to make a deep cross-shaped incision in the top of the loaf.
.Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
.Remove from the oven and allow to cool on a wire rack.
