Ingredients

4 lbs prepared mutton , cut into fine strips rare ( or shredded )
1 1/2 lbs cabbage ( shredded 1/4 inch )
1 medium carrot , julienned
1/2 celery rib , finely sliced
6 large spring onions , finely sliced lengthways
12 1/2 ounces cooked barley
12 1/2 ounces cooked rice
4 lemons , grated zest only ( large )
2/3 cup light soy sauce
2/3 cup oyster sauce
2/3 cup five-spice powder
10 tablespoons ground allspice
1/3 fresh ginger , peeled and grated
5 tablespoons light soy sauce
3 tablespoons sugar
120 ready-made large spring roll wrappers , thawed if frozen ( available from Asian supermarkets )
2/3 cup maizena cornflour , plus
1 tablespoon hot water
2/3 cup peanut oil , plus extra for deep-frying
sea salt and fresh ground white pepper

Instructions

1.In a large bowl, mix together the prepared mutton strips, shredded cabbage, julienned carrot, finely sliced celery, and spring onions.
2.In a separate bowl, combine the cooked barley, cooked rice, grated lemon zest, light soy sauce, oyster sauce, five-spice powder, ground allspice, and grated ginger.
3.Add the barley and rice mixture to the beef and vegetable mixture, mixing well to combine.
4.In a small bowl, mix together the remaining soy sauce and sugar to create a dipping sauce.
5.Place a spoonful of the filling mixture onto each spring roll wrapper and roll tightly, sealing the ends with a mixture of maizena cornflour and hot water.
6.Heat the peanut oil in a pan to 375°F and fry the rolls in batches until golden brown and crispy, about 5 minutes. Drain on paper towels and serve hot with the dipping sauce.
