1/2 teaspoon finely grated lemon rind
16 fresh scallops , cleaned
1/4 cup shredded parmesan cheese
black pepper , to taste
2 tablespoons sliced almonds , toasted and slightly crushed

Instructions

1.In a large pan, melt the butter over medium heat. Add the leek and garlic, and cook until softened.

3.Gradually add the champagne or white wine to the pan, stirring constantly until the liquid has been fully absorbed by the rice.
4.Next, add the chicken stock to the pan one cup at a time, stirring constantly and waiting for each cup of liquid to be fully absorbed before adding the next.
5.Once all the stock has been added to the pan, pour in the heated milk and stir to combine. Add the thyme, chives, and lemon rind, and season with black pepper.
6.In a separate pan, cook the scallops until they are golden brown on both sides, and then add them to the risotto.
7.Serve the risotto topped with shredded parmesan cheese and toasted almonds.
