Ingredients

250 g butter ( at room temperature )
80 g powdered sugar icing ( a confectioner 's sugar/cornflour blend sold here in Oz ; substitute icing sugar )
1 teaspoon vanilla essence
265 g plain flour
50 g cornflour ( cornstarch , ( 1/3 cup )
icing sugar , for dusting
60 g butter ( at room temperature )
80 g icing sugar
1 tablespoon cocoa
Aussie Melting Moments are a popular biscuit in Australia and can be found in most bakeries and cafes. These buttery bites are perfect for afternoon tea or as a treat to share with family and friends. They are light, melt-in-your-mouth biscuits that are easy to make and perfect for vegans and people with gluten intolerance. The combination of butter, flour, and cornstarch creates a perfect balance and a heavenly texture. Instructions

1.Preheat your oven to 160°C (fan-forced). Line two baking trays with baking paper and set aside.
2.In a large mixing bowl, beat your butter for 2 minutes or until pale and creamy. Add powdered sugar and vanilla essence, and beat until combined.
3.Sift in flour and cornflour and mix until just combined. Do not overmix.
4.Roll 2 teaspoons of mixture into a ball and place onto your prepared baking tray. Repeat until you’ve used all the mixture- you should end up with about 40 balls.
5.Using a fork, gently flatten the dough ball until it is roughly 1cm thick and 4cm in diameter.
6.Bake for 10-12 minutes or until they are just starting to turn golden on the edges.
7.Once cooked, allow the biscuits to cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely.
8.While the biscuit cools, start making the filling by beating the butter and icing sugar for 2 minutes or until pale and creamy. Add cocoa and beat for a further minute.
9.Sandwich the filling between two biscuits and dust with icing sugar, then serve.
