Ingredients

1 3/4 lbs ground lamb
1 shallot , peeled and chopped
1 tablespoon capers , chopped
6 -8 large basil leaves , julienned
1/4 teaspoon fresh ground pepper
1/2 cup cornmeal , for coating ( or flour )
1 tablespoon vegetable oil , for cooking
3 tomatoes , diced
1 red onion , diced
1 teaspoon sugar
1 teaspoon balsamic vinegar

1 teaspoon olive oil
4 kaiser rolls , split ( or hamburger buns )
2 -3 tablespoons soft fresh goat cheese ( or chevre )

Instructions

1.In a large bowl, combine ground lamb, shallot, capers, basil leaves, and fresh ground pepper. Mix well.

3.Heat vegetable oil in a large skillet over medium-high heat and cook the patties for around 5 minutes per side until golden brown.
4.While the patties are cooking, mix in a separate bowl the diced tomatoes, red onion, sugar, balsamic vinegar, salt, pepper, and olive oil to make a relish. Set aside.
5.Spread one tablespoon of goat cheese on each bun bottom. Place a lamb patty on top and spoon some tomato relish over it. Cover with the bun tops and serve hot.
