Ingredients

2 cups plain flour

125 g butter , chopped
cold water
3 slices bacon , chopped , with rind removed

Instructions

1.Preheat oven to 200°C (180°C fan-forced).
2.Combine flour, salt and butter in a mixing bowl. Use fingertips to rub in the butter until the mixture resembles breadcrumbs. Add enough water to make firm dough.
3.Roll the dough out on a lightly floured surface until it is about 5mm thick. Use it to line a 20cm lightly greased pie dish. Trim the edges.
4.Cook bacon in a frying pan until it is lightly browned. Layer it in the bottom of the pastry.
5.Beat eggs, salt, cayenne pepper, onion, parsley, and milk together. Pour the egg mixture into the pastry shell.
6.Bake the pie for 35-40 minutes or until golden brown.
