Ingredients

7 1/2 - 8 cups water
4 cups brown rice
2 cans pigeon peas or ( 14 ounce ) cans kidney beans , drained and well-rinsed
1 onion , diced
1 green pepper , chopped
1 tablespoon olive oil
2 dashes black pepper
sea salt or soy sauce
1 tablespoon coconut cream ( can be solid ) ( optional )
hot pepper , diced

Instructions

1.In a large saucepan, bring water to a boil.
2.Add rice, pigeon peas/ kidney beans, onion, and green pepper.
3.Cover and cook over medium heat until the rice is tender, stirring occasionally for about 20-30 minutes.
4.Stir in olive oil, black pepper, salt/soy sauce, coconut cream, and hot pepper.
5.Remove from heat and let the rice rest for at least 5 minutes, covered. Serve warm.
