3/4 cup rice
2 medium tomatoes , diced

1 lemon , juice of
1/2 cup plus tbl olive oil
1 can chickpeas
1/3 cup chickpeas

Instructions

1.Wash the rice and place it in a pot with 1 1/2 cups of salted water. Bring the water to a boil and then simmer covered for 18-20 minutes or until the water has evaporated and the rice is cooked.
2.In a separate pan, heat 1/4 cup of olive oil over medium heat. Add the diced tomatoes, green onions, and chickpeas to the pan, and cook for 10 minutes or until the vegetables are tender.
3.Add cooked rice, herbs (parsley and mint), cinnamon, allspice, pepper, and salt to the pan. Mix everything well.
4.Pour remaining 1/4 cup of olive oil and lemon juice over the rice mixture and sprinkle with ground sumac. Stir well and cook for another 10-15 minutes over medium heat.
5.Serve the stuffing hot or at room temperature.
