Ingredients

1 onion , chopped
2 cans black beans , rinsed & drained
1 cup salsa
1/2 lime , juice of , fresh

8 whole wheat tortillas ( heat or fry as desired )
3/4 3/4 cup cheddar cheese ( or more to taste ) or 3/4 cup monterey jack cheese ( or more to taste )
cooked brown rice
shredded lettuce
shredded cooked chicken breast
shredded cooked beef
sliced avocado
sour cream
salsa
Black Bean Burritos are a popular Mexican-inspired dish that can be found throughout North America. This recipe, passed down from Aunt Jenny, is a delicious twist on the traditional burrito, using black beans as the main ingredient for a flavorful and healthy meal. The black beans are simmered with onion, salsa, lime juice and cilantro to create a zesty filling that is then rolled up in a whole wheat tortilla alongside brown rice and avocado for an added bonus of healthy fats. Instructions

1.Preheat the oven to 375°F (190°C)
2.In a large skillet, sauté the onion until soft and translucent.
3.Add the black beans, salsa, lime juice and fresh cilantro. Cook for 10-15 minutes until well combined.
4.Place the whole wheat tortillas on a baking sheet and sprinkle the cheese over them. Bake in the oven for 2-3 minutes until the cheese is melted.
5.Turn off the oven and remove the baking sheet from the oven. Add 3 tablespoons of the cooked brown rice, 3 tablespoons of the black bean mixture and a handful of shredded lettuce to each tortilla.
6.Garnish with shredded cooked chicken breast, shredded cooked beef, sliced avocado, sour cream and extra salsa, if desired.
7.Roll up each tortilla and serve.
