Instructions

1.Preheat your oven to 375°F. Line a baking sheet with parchment paper.
2.In a large mixing bowl, combine the ground pork, breadcrumbs, parmesan cheese, garlic, onion, red pepper flakes, italian seasoning, and beaten egg. Mix well to combine.
3.Form the mixture into small meatballs, approximately 1 inch in diameter.
4.Place the meatballs on the prepared baking sheet, and bake for 15-20 minutes, or until cooked through and lightly browned.
5.While the meatballs are cooking, heat the olive oil in a large pot over medium heat. Add the chopped carrot, celery, onion, and parsley. Cook, stirring frequently, for 5-7 minutes, or until the vegetables are softened.
6.Pour in the chicken broth and bring to a boil. Add the uncooked orzo pasta and simmer for 7-10 minutes, or until the pasta is tender.
7.Stir in the spinach and cooked meatballs. Cook for an additional 2-3 minutes, until the spinach is wilted.
8.Season the soup to taste with salt and pepper. Sprinkle with fresh parmesan cheese before serving.
