2 small red chilies , chopped

250 g firm tofu , drained and pressed
1 aubergine
2 tablespoons peanut oil
12 short wooden skewers , soaked in water

Instructions

1.In a mixing bowl, combine the shallot, lemongrass, red chilies, garlic cloves, gingerroot, lime zest, and fresh coriander to make the spice paste.
2.Cut the tofu and aubergine into small bite-sized pieces.
3.Add the peanut oil to the spice paste and mix well.
4.Marinate the tofu and aubergine pieces in the spice paste for at least 30 minutes and skewer them together onto the soaked wooden skewers.
5.Preheat your grill or barbecue and cook the satay sticks for 5-7 minutes on each side until cooked through.
6.In a small saucepan, heat the remaining peanut oil and sauté the shallot, garlic, and red chilies for 2-3 minutes.
7.Add the ground cumin, ground coriander, crunchy peanut butter, coconut milk, and lime juice, and mix well to make the dipping sauce.
8.Serve the hot satay sticks with the spicy dipping sauce on the side.
