Auberge Roast Chicken Rillettes is a classic French dish that is made by slow-cooking chicken in spices and wine, then shredding the meat and mixing it with cooking liquid to make a spreadable paste. This version of the dish is flavored with Armagnac, thyme, and garlic, which gives it a rich and complex flavor. The rillettes can be made in advance and stored in the refrigerator, making them perfect for entertaining guests or as a quick snack. Traditionally served on bread or crackers, Auberge Roast Chicken Rillettes can be garnished with fresh herbs or other toppings to enhance their flavor.

Instructions

.Preheat the oven to 375°F.
.In a large ovenproof dish, arrange the chicken quarters in a single layer and sprinkle with thyme and garlic.
.Add the diced shallot, quatre-epices or rabelais seasoning, ground mace, and black peppercorns. Pour the white wine over everything, then season with salt and sprinkle with armagnac.
.Cover the dish with foil, then bake in the preheated oven for 90 minutes.
.Remove the foil and brush the chicken with melted duck or goose fat. Increase the oven temperature to 425°F and return the chicken to the oven for another 20 to 30 minutes, until the skin is golden brown and crispy.
.Remove the chicken from the oven and allow it to cool. Once it is cool, remove the meat from the bones and shred the chicken into small pieces with a fork. Reserve the cooking liquid remaining in the dish.
.In a large bowl, mix the shredded chicken with just enough of the reserved cooking liquid to make a smooth and spreadable paste. Taste and adjust the seasoning as needed.
.Pack the rillettes into small, sealable jars and smooth the tops with a spatula. Cover the jars and refrigerate the rillettes until they are set and firm.
.Serve the rillettes on toast or crackers, garnished with fresh herbs, if desired.
