Ingredients

3 lbs ripe figs , washed and diced
2 lbs preserving sugar
1 -2 tablespoon ground ginger
1 cooking apple , cored , peeled and diced
4 -5 tablespoons crystallized ginger , chopped roughly
3 lemons , juice of , only
1/2 pint water
Auberge Fig and Ginger Jam, also known as confiture, is a traditional French recipe that dates back to the 14th century. It is made with fresh figs, sugar, ginger, and lemon juice, and has a tangy, fruity flavor that is perfect for breakfast or as a condiment. This jam pairs well with cheese, meats, or desserts, and can also be used as a filling for cakes and pastries. Instructions

1.In a large pot, mix together the diced figs, preserving sugar, ground ginger, diced apple, crystallized ginger, lemon juice, and water.
2.Heat the mixture on low heat, stirring constantly, until the sugar dissolves completely.
3.Bring the mixture to a boil over high heat, then reduce the heat and simmer for at least one hour, stirring occasionally. Skim off any foam that appears on the surface as the jam cooks.
4.Once the jam has thickened and passes the wrinkle test (see notes), remove it from the heat and let it cool for a few minutes.
5.Ladle the jam into clean, sterilized jars, leaving about half an inch of headspace at the top of each jar.
6.Wipe the rims of the jars clean, then apply the lids and screw bands. Process the jars in a boiling water bath for 10 minutes (see notes). Allow the jars to cool before checking the seals and storing them in a cool, dark place.
