Athenian Blintzes are a Greek variation of Russian blintzes, made with spinach, feta cheese, and kalamata olives. They are a popular breakfast dish in Greece, but they can also be served as an appetizer or light lunch. The blintzes are thin, pancake-like crepes that are filled with a savory mixture of spinach, feta cheese, and olives, and they are often served with a dollop of sour cream. The flavor of the blintzes is slightly tangy and salty, making them a perfect savory breakfast option.

Instructions

1.In a large mixing bowl, whisk together milk, eggs, flour, and salt to make a smooth batter.
2.Cook frozen spinach according to package directions, then squeeze the excess water and drain it into the batter. Mix well to combine.
3.Heat a non-stick skillet over medium-high heat. Melt butter in the skillet and sauté scallions for a minute until pale.
4.Add sesame oil, feta cheese, kalamata olives, salt, and black pepper to the skillet. Saute for 2-3 minutes until the ingredients are mixed well.
5.In the skillet, pour 1/4 cup of batter and swirl it to coat the bottom of the skillet evenly. Cook for 30 seconds to 1 minute, or until the edges start to lift away from the skillet.
6.Flip the blintz and cook for an additional 30 seconds. Repeat this process until all the batter is finished.
7.Serve the blintzes with sour cream as a garnish.
