4 fish steaks

6 5/8 ounces eau de vie ( `` Jenever '' - from Belgium or Holland )

Instructions

1.Wash and clean the asparagus, cutting off the woody parts on the end.
2.Season the fish steaks with pepper and salt.
3.Coat the fish steaks with mustard.
4.Melt butter in a pan and fry the fish steaks until browned on both sides, approximately 5 minutes per side.
5.Remove from the pan and set aside.
6.In the same pan, toast the breadcrumbs and add chopped chives and a pinch of nutmeg.
7.Add fish stock, eau de vie, and cayenne pepper. Let the liquid simmer until it has reduced to half of its volume.
8.Add diced smoked ham and saffron.
9.Arrange asparagus and fish steaks on plates and pour the sauce over them.
