Ingredients

1 lb green asparagus , trimmed
oil ( for frying )
10 g dried Chinese mushrooms , soaked in water , drained ( mu err mushrooms )
1 -2 tablespoon finely chopped fresh ginger
1 1/2 dl vegetable stock ( a little bit less than a cup )
2 tablespoons rice vinegar or 2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
2 tablespoons neutral oil ( such as sunflower )
salt
pepper , freshly ground
2 tablespoons sesame seeds , roasted in a frying pan without fat
2 tablespoons chopped chives
This asparagus salad with Chinese mushrooms is an excellent choice for those who want to try something different and enjoy healthy, colorful, and super delicious food. Instructions

1.Cut the asparagus into 4-5 cm long pieces.
2.Heat the oil in a frying pan and fry the asparagus until just tender, about 4 minutes.
3.Remove the asparagus and keep warm.
4.In the same pan, fry the drained Chinese mushrooms and ginger for about 2 minutes.
5.Add the vegetable stock, vinegar, soy sauce, sesame oil, neutral oil, salt and pepper to the mushrooms. Simmer until the sauce thickens slightly.
6.Arrange the asparagus pieces on a platter, spoon the mushrooms over them and sprinkle generously with the roasted sesame seeds and chives.
