Ingredients

2 bundles asparagus
1 1/2 tablespoons olive oil
1 1/2 pints chicken or 1 1/2 pints vegetable stock
3 shallots or 1 small onion , finely chopped
3 garlic cloves , finely chopped
9 ounces risotto rice
3 1/2 fluid ounces white wine
1 few lemon thyme leaves
1 ounce butter
3 ounces parmesan cheese , plus extra to serve
Asparagus Risotto with Lemon Thyme and Parmesan is a hearty Italian dish made with Arborio rice, fresh asparagus, flavorful Parmesan, and lemon thyme leaves. This dish can be presented as the main course for a sophisticated meal or served as a side dish for a casual dinner party. You can also omit the Parmesan to make it vegan-friendly. Instructions

1.Preheat your oven to 425°F (220°C).
2.Evenly trim tough ends off the asparagus and coat with 1 tablespoon olive oil. Season with salt and pepper, then roast for 6-8 minutes until tender.
3.Heat the stock in a saucepan until hot, then reduce heat to a low simmer. In a separate pan, fry the shallots and garlic in remaining oil over medium-low heat for 10 minutes until softened. Add the rice and stir for 1-2 minutes before adding white wine until reduced by half. Start adding hot stock to the rice mixture, one ladleful at a time, stirring constantly and letting each addition absorb before adding the next. Continue for about 20 minutes until the rice is cooked but still has a slight bite.
4.Cut asparagus into bite-sized pieces, then add to the risotto with butter, half the Parmesan, lemon thyme leaves, and salt and pepper to taste. Mix well before serving into bowls and garnishing with extra Parmesan.
