Ingredients

6 white crusty rolls , preferably oval shaped
12 ounces asparagus
5 fluid ounces single cream
2 egg yolks
salt
fresh ground pepper , to taste
1 pinch grated nutmeg
2 ounces butter

Instructions

1.Preheat the oven to 350°F (175°C)
2.Cut off the tops of the rolls and hollow them out leaving a shell of approximately ½” inch all around. Set aside
3.Cut the asparagus tips to a length of about 1½” inches and plunge into boiling salt water for 5 minutes, drain, refresh under iced water and drain again
4.Cut the remainder of the asparagus into pieces and mix with the cream, egg yolks, salt, pepper, and nutmeg.
5.Fill the rolls with this mixture
6.Place 2 asparagus tops on each roll and sprinkle with melted butter
7.Place on a flat baking sheet and bake in the oven for about 20 minutes, remove and serve hot.
