1 canned peach , use two halves

1 dash lime juice ( if too sweet )
1 tablespoon olive oil
1 garlic clove , minced
1/2 lb fresh asparagus , shaved into thin strips

8 crepes , store-bought
3 cups monterey jack cheese , shredded ( or 1 large wedge brie cheese preferably )
3/4 lb chicken breast , filet cooked and thinly sliced

Instructions

1.Prepare the sweet rum dip by combining the Thai sweet chili sauce, dark rum, grated ginger, canned peach, grated nutmeg, and a dash of lime juice (if too sweet) in a small saucepan over medium heat. Cook for a few minutes until the dip is heated through, then remove from heat and set aside.
2.Heat the olive oil in a large skillet over medium heat.
3.Add minced garlic and sauté until fragrant, about 1-2 minutes.
4.Add shaved asparagus and cook for another 2-3 minutes, until the asparagus is tender but still crisp.
5.Season with salt and pepper to taste.
6.Place one crepe in the skillet, sprinkle with shredded Monterey Jack cheese, and add thinly sliced cooked chicken breast over the cheese. Add the cooked asparagus.
7.Fold the crepe in half and continue cooking until the cheese is melted and the crepe is golden brown, about 2-3 minutes per side.
8.Repeat the process with the remaining crepes.
9.Cut the quesadillas into wedges and serve hot with the sweet rum dip on the side.
