Ingredients

1 kg asparagus
100 ml cream ( not thickend )
100 g blue Stilton cheese , crumbled
3 eggs
4 spring onions
5 sheets phyllo pastry
1 tablespoon olive oil
salt and pepper
Asparagus and Blue Cheese Pie is a tasty and easy dish that's perfect for a quick dinner. The asparagus adds plenty of vitamins and fiber to the dish, while the blue cheese provides a rich and tangy flavour. Instructions

1.Preheat the oven to 200°C.
2.Cut off the woody ends of the asparagus, then cut the spears in half.
3.In a large bowl, whisk together the cream, eggs and blue cheese until well combined.
4.Add the asparagus and spring onions to the bowl and mix to combine.
5.Brush a 23cm pie dish with olive oil.
6.Lay a sheet of phyllo pastry over the dish and press down gently.
7.Repeat with the remaining pastry sheets, overlapping them slightly to cover the pie dish.
8.Pour the asparagus mixture into the pie dish.
9.Sprinkle with salt and pepper to taste.
10.Bake in the preheated oven for 25-30 minutes, or until the filling is set and the pastry is golden brown. Serve warm or cold.
