1/2 onion , sliced
2 tablespoons chopped fresh ginger
1 tablespoon red curry paste
1 tablespoon rice wine vinegar
2 tablespoons vegetable oil , extra
1 kg chicken leg , drumstick and thigh , trimmed of visible fat and skinned
1 tablespoon soy sauce , extra
4 cups salad leaves
1/2 cup coriander leaves , roughly chopped
1/4 cup sliced red capsicum
1/4 cup sliced green onion
1/2 small red onion , finely sliced
1 tomatoes , cut in half then into half moons
1/2 ripe avocado , sliced
1 bunch asparagus , trimmed , blanched and halved
500 g hokkien noodles , prepared according to packet instructions

Instructions

1.Preheat a large, heavy-bottomed pot over medium-high heat.
2.Add the chopped garlic and black pepper, saute for a few seconds until fragrant.
3.Add the vegetable oil, then add water, soy sauce, ketjap manis, oyster sauce, five spice powder, onion, chopped ginger, and curry paste. Stir well, bring to a boil, then reduce heat to a simmer.
4.Season chicken drumsticks and thighs with salt and pepper, and then add them to the pot. Allow it to cook for at least 30 minutes, until the chicken is cooked through and tender.
5.Remove the chicken from the pot and set it aside to cool on a plate, covered with cling film.
6.Increase the heat to high and reduce the liquid by half to make a sauce. Taste and adjust the seasoning as necessary.
7.In a separate pan, heat the extra vegetable oil over high heat. Add the cooled chicken and fry for 2-3 minutes on each side until nicely browned and crispy.
8.Toss the salad leaves, coriander, sliced capsicum, sliced green onion, red onion, tomato, avocado, and blanched asparagus together in a large bowl. Use a sharp knife to thinly slice the cooked chicken, then add it to the salad mixture.
9.Top the salad with the prepared Hokkein noodles, then pour the reduced braising liquid over the top. Serve immediately.
