Ingredients

200 g dry soba noodles
500 g lean beef rump
2 teaspoons canola oil
300 g snow peas
2 carrots
1 red capsicum
1 English cucumber
150 g bean sprouts
1/4 cup chang 's oriental salad dressing
1 clove crushed garlic
1 teaspoon minced ginger
This Asian-Style Beef Noodle Salad is a refreshing and light dish that is perfect for a hot summer day. It's a fusion of Japanese and Chinese flavors, and can be easily adapted to suit individual tastes and preferences. Instructions

1.Cook soba noodles according to package instructions, rinse under cold water and set aside.
2.Heat oil in a large skillet over medium-high heat. Season beef rump and cook, turning occasionally, until browned on all sides and desired doneness is reached. Rest for 5 minutes, then slice thinly.
3.Meanwhile, trim the ends of the snow peas, blanch them in boiling water and rinse under cold water. Julienne the carrots and red capsicum, cut the English cucumber into bite-sized pieces and rinse bean sprouts.
4.In a small bowl, whisk salad dressing, garlic and ginger until combined.
5.In a large bowl, add soba noodles, beef slices, prepared vegetables and salad dressing mixture. Toss gently.
