Ingredients

Dry Rub :
1/2 cup kosher salt
1/3 cup light brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground anise seed or fennel seed
1 teaspoon black pepper
1/2 teaspoon ground cloves
Handful hickory or apple wood chips for smoking , soaked in water and drained ( optional )
2 cups hoisin barbecue sauce

Instructions

1.In a small bowl, mix kosher salt, light brown sugar, ground cinnamon, ground anise seed or fennel seed, black pepper, and ground cloves to make the dry rub.
2.Rub the mixture onto the ribs, covering all sides.
3.Preheat the grill to 250°F.
4.Add the wood chips to the smoker box and place it on the grill grates (if using).
5.Place the ribs in the smoker and cook for 3 hours, maintaining a temperature of 250°F.
6.After 3 hours, brush hoisin barbecue sauce onto the ribs and return to the smoker for an additional hour.
7.Remove the ribs from the smoker and let rest for 10 minutes before slicing and serving.
