2 lbs firm tofu , extra firm , drained , cut into 1-inch cubes
6 cups water
1 cup daikon radish , 1-inch cubed , peeled

1/4 cup low sodium soy sauce
2 tablespoons mirin
6 shiitake mushrooms , dried
1 kombu seaweed , 3-inch square
6 tablespoons water
1/4 cup cornstarch
2 teaspoons dark sesame oil
1/4 cup green onion , chopped

Instructions

1.Heat the vegetable oil in a large pot over medium heat.

5.While the vegetables are simmering, whisk together 6 tablespoons of water and cornstarch in a small bowl until smooth.
6.Once the vegetables are tender, remove the kombu and shiitake mushrooms from the pot.
7.Stir in the cornstarch mixture and let cook for 2-3 minutes, or until stew thickens.
8.Remove from heat and stir in the dark sesame oil.
9.Serve topped with chopped green onions.
