Ingredients

800 g lamb racks , frenched
2 garlic cloves , crushed
2 1/2 cm ginger , grated
2 tablespoons sesame seeds , toasted
1 tablespoon sugar
3 tablespoons light soy sauce
1 teaspoon sesame oil
1/2 cup beef stock
2 teaspoons sesame oil
2 teaspoons tahini

Instructions

1.Preheat oven to 190C (375F) or 170C (340F) fan-forced
2.Combine garlic, ginger, sesame seeds, sugar, soy sauce and 1 tsp sesame oil in a bowl and stir until sugar dissolves
3.Place lamb racks onto a baking tray
4.Brush soy sauce mixture over the lamb racks
5.Roast for 20-25 minutes or until cooked to your liking
6.Cover lamb racks with foil and set aside to rest for at least 5 minutes
7.In a pan, stir beef stock, tahini and 2 tsp sesame oil
8.Cook for 2 to 3 minutes, stirring constantly until sauce thickens slightly
9.Carve the lamb racks into cutlets and serve with sesame sauce
