1 -2 lemon , zest of , depending on taste preferences
1 tablespoon fish sauce
1/2 cup finely chopped fresh coriander leaves
1 small red chili pepper , deseeded , finely chopped ( to taste )
225 g sliced bamboo shoots , drained , finely chopped
250 g dried rice vermicelli
2 lemons , peeled , cut into segments
1/2 cup fresh mint leaves , torn
1/2 cup fresh coriander leaves , torn
1 lebanese cucumber , halved , thinly sliced
1 tablespoon vegetable oil

Instructions

1.Preheat the oven to 180C.
2.In a large bowl, mix together ground pork, char siu sauce, minced garlic, lemon zest, fish sauce, chopped coriander leaves, chopped red chili pepper, and sliced bamboo shoots.
3.Form the mixture into 8 mini meatloaves.
4.In a greased baking dish, place the meatloaves and bake for 25-30 minutes.
5.While the meatloaves are baking, cook the rice vermicelli according to package instructions.
6.Drain and rinse the cooked noodle under cold running water. Set aside.
7.In a large mixing bowl, combine segments of lemon, torn mint leaves, torn coriander leaves, thinly sliced cucumber, and cooked rice vermicelli.
8.Toss the ingredients together with vegetable oil.
9.Serve the mini meatloaves with the noodle salad on the side.
