Ingredients

1 lb lean ground beef
3 cups bell peppers , chopped ( I used a combination of red , yellow & green )
1 large onion , thinly sliced
2 large garlic cloves , thinly sliced
2 tablespoons fresh gingerroot , minced
2 tablespoons dried parsley
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 cup beef stock
3 tablespoons gluten-free soy sauce
1 tablespoon molasses
1 teaspoon chili paste
1 teaspoon gluten-free Worcestershire sauce ( Lea & Perrins is GF )
1/4 cup water
2 tablespoons cornstarch
This Asian-inspired meal is a quick and easy way to add nutritious and colorful ingredients to your dinner table. Instructions

1.Heat a large non-stick skillet over medium-high heat; coat it with cooking spray.
2.Add the ground beef to the skillet, using a spatula to break it up into smaller pieces as it cooks.
3.Once the beef is browned and cooked through, remove it from the pan and set it aside.
4.In the same skillet, add the chopped peppers, sliced onions, garlic, ginger, parsley, red pepper flakes, and salt. Cook for 5-7 minutes, or until the vegetables are tender.
5.Meanwhile, in a small bowl, whisk together the beef stock, soy sauce, molasses, chili paste, Worcestershire sauce, water, and cornstarch.
6.Add the cooked ground beef back into the skillet with the vegetables. Pour the beef stock mixture over the top of the beef and vegetables, stirring everything together well.
7.Bring the mixture to a boil and let it cook for another 1-2 minutes, or until the sauce has thickened.
8.Serve hot over rice or noodles.
