4 scallions , divided
4 large garlic cloves , minced

1 whole star anise
4 dried shiitake mushrooms
3 medium carrots , sliced
3 baby bok choy , quartered lenghtwise
8 ounces thin rice sticks

Instructions

1.In a large bowl, combine half of the scallions, garlic, ginger, egg, soy sauce, sesame oil, five-spice powder, salt, and pepper. Mix well.
2.Add in the ground chicken and pork, and breadcrumbs. Mix until well combined.
3.Roll into meatballs, about 1-inch in size.
4.In a large pot, bring the chicken stock to a simmer. Add in the garlic powder, ground ginger, star anise, and shiitake mushrooms. Simmer for 10 minutes.
5.Add in the sliced carrots and bok choy, and simmer for another 10 minutes.
6.Add in the rice noodles and meatballs. Cook for another 5-7 minutes, until meatballs are cooked through and noodles are tender.
7.Divide into bowls, and garnish with remaining scallions.
