Ingredients

1 head cabbage
1 teaspoon sesame oil
4 green onions , sliced
2 garlic cloves , smashed
2 teaspoons minced gingerroot
1 1/2 cups coarsely chopped mushrooms ( about 4 oz )
1 lb lean ground chicken
1 small sweet red pepper , diced
1/2 cup chopped fresh coriander
2 tablespoons soy sauce
1/4 teaspoon hot pepper sauce
3/4 cup cooked rice
1 egg , beaten
1 1/2 cups chopped canned tomatoes
1/3 cup rice vinegar
1/4 cup packed brown sugar ( I use brown sugar twin )
1/4 cup soy sauce
1/4 cup oyster sauce
1 tablespoon minced gingerroot
1 1/2 teaspoons sesame oil
Asian chicken cabbage rolls are a modern twist on an old classic recipe. These rolls have become a family favorite as they are both healthy and delicious. Instructions

1.Preheat the oven to 375°F (190°C).
2.Bring a large pot of water to boil. Add the cabbage head and boil for about 5 minutes, or until the leaves become tender. Drain the water and cool the cabbage head.
3.In a large skillet, heat sesame oil over medium heat, add green onions, garlic, mushrooms, and gingerroot, cook for about 2 minutes or until fragrant.
4.Add red pepper, fresh coriander, soy sauce, and hot pepper sauce. Stir well then add cooked rice, beaten egg, and ground chicken.
5.Spoon filling onto the cabbage leaves then roll and tuck the edges. Place the rolls into a greased baking dish.
6.In a separate bowl, mix together canned tomatoes, rice vinegar, brown sugar, soy sauce, oyster sauce, minced gingerroot, and sesame oil. Pour the sauce over the top of the rolls.
7.Cover the baking dish with foil and bake for about 40 minutes.
8.Remove foil and bake for additional 10 minutes or until golden brown.
