Ingredients

125 g pearl barley
750 g fresh herbs equal portions parsley , spinach , chive , dill and coriander
125 g garbanzo beans
125 g red kidney beans
125 g lentils
1/4 cup white rice
3 medium onions
2 cups kashk
1 tablespoon dried mint
1 teaspoon turmeric
salt and pepper
Ash-E Joe - Persian Barley Soup is a popular dish in Iran and other parts of the Middle East. It is typically served in the winter months as it is a warm and nourishing dish that is perfect for cold days. The soup has a thick and creamy consistency that is achieved by adding kashk, a tangy and sour dairy product, to the soup. The soup is topped with fried onions and served with a variety of bread and herbs.

Instructions

1.In a large pot, bring 8 cups of water to a boil.
2.Add the pearl barley to the pot and let it cook for 15 minutes.
3.Add the lentils, garbanzo beans and red kidney beans to the pot and cook for another 15 minutes.
4.In a separate pan, sauté the diced onions until soft and translucent.
5.Add the turmeric and dried mint to the onions and continue to cook for another 5 minutes.
6.Add the onion mixture to the pot of soup along with the white rice and chopped herbs.
7.Season with salt and pepper as per your taste.
8.Let the soup simmer for 30-40 minutes until all the ingredients are well cooked.
9.Add the kashk to the soup in the end and let it simmer for another 10 minutes.
