1/2 cup all-purpose flour | |
1 egg | |
1 can artichoke hearts , drained and halved | |
1/4 cup vegetable oil | |
1/4 cup butter | |
1 lemon , juiced | |
3 tablespoons Parmesan cheese | |
1/4 cup dry sherry | |
salt and ground black pepper to taste | |
1 tablespoon chopped fresh parsley , or to taste |
1. | In a shallow dish, beat the egg. |
2. | Place the flour in a separate shallow dish. |
3. | Dip the artichoke halves in the beaten egg, then coat with flour. |
4. | Heat the vegetable oil and butter in a large skillet over medium heat. |
5. | Once hot, add the coated artichoke halves and cook for 3-4 minutes on each side until golden brown. |
6. | Add lemon juice, Parmesan cheese, sherry, salt, and pepper. |
7. | Cook for an additional 2 minutes until the sauce thickens slightly. |
8. | Sprinkle with chopped parsley and serve. |
