4 artichokes ( about 2 pounds )
1 lemon , halved crosswise
4 oranges
6 radishes , thinly sliced
12 kalamata olives
2 tablespoons extra virgin olive oil
1/2 teaspoon sweet paprika
salt , to taste

Instructions

1.Cut off the artichokes stems flush with their bases, then rub the cut surfaces with the cut side of 1/2 lemon to prevent browning.
2.Snap off the tough outer leaves from the artichokes and discard. Cut the top third off each artichoke. With a sharp knife or kitchen shears, trim the prickly leaf tips from the remaining leaves.
3.Cut each artichoke heart lengthwise into thin slices. Rub the slices with the cut side of the remaining lemon half.
4.Slice the top and bottom off each orange. Slice away the peel and white pith, following the curve of the fruit. Cut the oranges crosswise into thin slices.
5.Arrange the artichokes and oranges on a platter. Scatter the radishes and olives over the top. Sprinkle with olive oil, paprika, and salt.
