Ingredients

25 ml olive oil ( for dressing , 2 Tablespoons )
50 ml olive oil
15 ml white wine vinegar
10 ml tomato puree
1 large garlic clove , minced
1 1/2 teaspoons fresh thyme , chopped or 1 1/2 teaspoons basil , fresh , chopped

pepper
175 g button onions , skinned
1 teaspoon caster sugar
225 g button mushrooms , wiped
2 cans artichoke hearts ( 14oz )

Instructions

1.In a bowl, mix together 50 ml olive oil, white wine vinegar, tomato puree, minced garlic, fresh thyme, salt, and pepper to create the dressing.

3.Sprinkle caster sugar over the onions and continue to cook until they start to caramelize.
4.Add the wiped button mushrooms and cook for another 3-4 minutes.
5.Pour in the artichoke hearts and dressing, and stir to coat all the ingredients.
6.Cover and let simmer for another 5-10 minutes until everything is cooked through and flavors are melded.
