Ingredients

1 lb spaghetti
3 eggs
1/2 cup shredded parmesan cheese ( romano works too )
ground black pepper
1 bag frozen artichoke hearts
1 can anchovies packed in oil
3 tablespoons butter
salt , for cooking pasta

Instructions

1.Cook spaghetti according to package instructions, adding salt to the water.
2.While the pasta cooks, place the frozen artichoke hearts in a colander and run them under hot water for a few seconds to thaw. Drain well and pat dry.
3.In a large bowl, whisk together the eggs, cheese, and black pepper. Set aside.
4.In a large skillet over medium heat, melt the butter and add the anchovies with their oil. Cook for 2-3 minutes, breaking up the fillets with a wooden spoon, until the anchovies dissolve into the butter and are fragrant.
5.Add the artichoke hearts to the skillet and cook for 2-3 minutes, stirring occasionally, until cooked through.
6.Once the spaghetti is cooked, reserve 1 cup of the pasta cooking water and drain the rest.
7.Add the cooked spaghetti to the skillet, tossing to coat it in the anchovy butter and artichokes.
8.Remove the skillet from heat and pour the egg mixture over the spaghetti, quickly stirring to coat the pasta in the sauce. If the sauce seems too thick, add a little of the reserved pasta water to loosen it up.
9.Divide the spaghetti among 4 plates and sprinkle additional cheese and black pepper over each serving, if desired.
