Ingredients

8 medium artichokes , fresh
20 green asparagus , fresh , tender
3/4 cup extra virgin olive oil
1 ounce pistachio nut , chopped
1 egg white
1 glass water
4 teaspoons chives , chopped
2 ounces fresh breadcrumbs
2 garlic cloves , peeled and chopped
1/2 lemon , juice of
1 teaspoon salt
1/2 teaspoon white pepper

Instructions

1.Wash and clean the artichokes by removing the hardest leaves, until the tender part of the leaf is exposed.
2.Cut off the peak of the artichoke and remove the choke with a spoon. Cut into 4 pieces.
3.Peel the tough ends of the green asparagus and cut them in half. Blanch in boiling water for 2-3 minutes.
4.For the sauce, blend the garlic with a little water, add ½ cup of extra virgin olive oil, the egg white, salt, lemon juice, and white pepper. Blend until smooth.
5.In a pan, combine the breadcrumbs, chives, chopped pistachios, and the remaining olive oil. Toast for about 3 minutes.
6.In a pan, cook the artichokes in water for 20 minutes until tender. Mix with the asparagus, sauce, and breadcrumbs, and serve.
