4 cups long grain rice ( I use Uncle Ben 's )
8 cups water
1 medium onion , chopped
3 tablespoons olive oil
salt

Instructions

1.Rinse the rice under cold water and transfer to a pot.

3.As the water comes to a boil, add the chopped onions, olive oil, and salt to the pot.

5.Allow the rice to cook undisturbed for about 20-25 minutes or until the water has been fully absorbed.
6.Turn off the heat and leave the pot covered for another 5 minutes.
7.Fluff the rice with a fork and serve hot.
