Ingredients

1 cup poblano chiles ( fresh or roasted ) or 1 cup bell pepper , minced ( fresh or roasted )
2 cups rice
2 tablespoons olive oil
1 large sweet onion , finely minced
1 garlic clove , crushed
4 cups vegetable broth ( or chicken broth )
1 teaspoon cumin
salt
fresh ground pepper
1/4 cup fresh cilantro , chopped
1/4 cup chopped green onion

Instructions

1.Rinse rice under running water until the water runs clear and drain well.

3.In a heavy saucepan heat oil over medium heat, add onions and garlic, cook for 3 minutes until onions are translucent.
4.Add rice and stir well, cook for 2 minutes or until rice is golden brown.
5.Stir in the poblano sauce and 4 cups of broth, stir well.
6.Bring to a boil, reduce heat to low and cook covered for 20 to 30 minutes or until all the liquid is absorbed and the rice is cooked.
7.Remove from heat and let sit covered for 10 minutes.
8.Fluff with a fork and stir in the chopped green onion. Serve and enjoy!
