Ingredients

1 cup raw rice
2 tablespoons lard or 3 tablespoons olive oil
1 large tomatoes
1/2 white onion
2 garlic cloves
1/4 teaspoon black pepper
1 celery , cut in half
1 parsley sprig
1 1/3 cups chicken broth ( home made is best )
1/2 large lime , juice only
salt , to taste ( optional )

Instructions

1.Rinse the rice in a colander under cold water until the water runs clear. Leave to drain for 30 minutes.

5.Pour in the chicken broth, lime juice, and salt (if using). Stir well, cover the saucepan, and cook the rice, stirring occasionally, for about 15 minutes more or until all the liquid is absorbed and the rice is tender.
6.Remove the saucepan from the heat and let it sit for 5 minutes with the lid on before fluffing the rice with a fork and serving.
