Ingredients

1 lb long -grain rice
2 lbs chicken pieces
4 tomatoes
3 roasted red peppers , from a jar , chopped
2 medium onions , chopped
4 garlic cloves , minced
6 cups beef broth
1 cup white wine
2 bay leaves
2 cloves
7 tablespoons olive oil
salt and pepper
Arroz De Cabidela, also known as Portuguese Chicken and rice is an ancient recipe that was first introduced in northern Portugal. The dish is popular in many Portuguese eateries and is often served in large gatherings. This festive rice dish is served on special occasions like weddings, birthdays or religious events and is loved by all. Made with long-grain rice, chicken and beef broth, this recipe is the perfect blend of rustic flavors that offer a unique and rich taste.

Instructions

1.Wash and season chicken pieces with salt and pepper.
2.In a large pot, heat 5 tablespoons of olive oil over medium-high heat, add chicken pieces and brown them for about 5 minutes.
3.Remove the chicken pieces and set them aside.
4.In the same pot, saute onions and garlic for about 3 minutes in 2 tablespoons of olive oil.
5.Add diced tomatoes and roasted red peppers into the pot and continue cooking for another 5 minutes over medium heat.
6.Put the chicken back to the pot with the wine, bay leaves, cloves and beef broth.
7.Cover and let it simmer for 45 minutes.
8.Remove chicken from pot and set it aside.
9.Add rice and mix well. Taste test for salt and adjust to preference. Cover the pot and simmer until liquid is absorbed and rice is cooked (approximately 20 minutes).
10.Lastly, add chicken back to pot and let it cook through for another 5-7 minutes before serving.
