Ingredients

2 cups short-grain rice ( I used sushi rice , which seems to be the only short grain rice going around here )
1 1/2 cups crumbled queso fresco ( kolla cheese is traditional , but most Bolivian resources seem to agree that queso fresco is a good s )
1 teaspoon garlic , minced
1 tablespoon red onion , minced
1 cup milk
6 cups water
salt

Instructions

1.Rinse the rice thoroughly and soak in water for 30 minutes.
2.In a large pot, add the soaked rice, milk, minced garlic, minced red onion, and water. Stir to combine.
3.Bring the mixture to a boil over high heat, stirring occasionally.
4.Reduce heat to low and cover the pot with a lid. Let the rice simmer for about 25-30 minutes or until all the liquid is absorbed and rice is cooked through.
5.Remove the pot from heat and let it sit for 5 minutes, covered.
6.Fluff the rice with a fork and add crumbled queso fresco. Stir gently until the cheese is melted and evenly distributed throughout the rice.
7.Season with salt, to taste.
8.Serve hot and enjoy!
