Ingredients

2 cups medium grain rice ( rinsed )
1/4 - 1/2 lb pork
4 -5 cups hot water , approx
1/2 cup ready made sofrito sauce
1 can of cooked green pigeon peas ( gandules , undrained )
1 teaspoon salt
1/4 teaspoon black pepper
20 green olives
1 sazon goya con culantro y achiote
1 can tomato sauce
3 tablespoons oil
salt & pepper

Instructions

1.In a large pot, brown the pork in oil over medium heat until golden.
2.Add sofrito sauce, sazon, salt, pepper, olives, tomato sauce and stir well.
3.Pour pigeon peas with undrained liquid and stir well.
4.Add rice and 4-5 cups hot water, enough to cover the rice.
5.Bring to a boil and cook over medium heat for about 20 minutes, or until rice is done. Check the rice every 5 minutes and stir gently to make sure it does not stick to the pan.
6.Once the rice is cooked, switch off the heat and let rest for 5-10 minutes before serving.
