1 1/2 cups long grain rice

Instructions

1.Heat the olive oil in a large pot over medium heat.

4.Add the can of peeled tomatoes, cumin, crushed hot pepper, paprika, salt and pepper. Stir to combine and cook for about 2 minutes.
5.Add 1 1/2 cups of long grain rice and stir well. Allow the rice to sauté for 2 minutes.
6.Cover the rice with water (about 3 cups) and bring to a boil.
7.Reduce the heat to low, cover the pot and let it simmer for 20-25 minutes or until the rice is cooked and the water is absorbed.
8.Garnish with freshly chopped parsley or cilantro.
